Ensign Global College Hosts Transformative Food Systems Workshop with Global Collaborators

Food systems are complex and interconnected networks that involve the production, processing, distribution, consumption, and disposal of food. They affect the health, environment,
economy, and society of every person on the planet. However, many food systems are facing challenges such as climate change, population growth, poverty, inequality, and malnutrition.
How can we create more sustainable and resilient food systems for the future? In November 2023, Ensign Global College hosted a three-day workshop on Food Systems and
Transformation with attendees from Stellenbosch University, Witts University, and the University of Guelph.

This workshop aimed to delve into the complexities of food systems and explore diverse visions for a sustainable future. At present, the team is actively involved in three comprehensive case
studies across South Africa, Ghana, and Kenya. Dr. Sandra Boatemaa Kushitor, faculty of the Ensign Global College and the local Principal Investigator (PI) for the West African case study, shared insights into their data collection efforts, the “Seed Initiative.”

Kushitor noted, Data collection has been ongoing from the Greater Accra Region to approximately 200km off the coast of Ghana. Seeds, individuals who have stake in the agricultural or food processing industry, have been gathered from various locations including Kumasi, Accra, Takoradi, Cape Coast, and Tamale. To date, about 70 individuals have shared their data and thoughts on food insecurity and transformative ways to combat the issue. The project hopes to gather more data through snowballing. Most of these seeds are involved in agri-processing, advocacy and the development of skills for women. The end goal is to bring these individuals together to envision the future of the West African food system and its transformation.

The “seed initiative” seeks to bring together and inform stakeholders including policymakers, practitioners, and researchers to take practical action and share lessons that will move African food systems forward.
